Charoenkrung’s one-Michelin-starred 80/20
is gearing up to unveil a new menu cooked up by its new chef. And it’s one who fans of the restaurant will probably remember.
Canadian chef Andrew Martin is back at the helm. He’s no stranger to Bangkok’s culinary scene, or 80/20.
After the recent exit of Napol “Joe” Nantraget and Saki Hoshino, who have opened a new spot called Samlor
, Martin returns to his old stomping grounds, showcasing his culinary creativity which leans heavily on his past travels.
The 14-bite (B2,800) and 18-bite tasting menus (B3,300) both offer a journey that spans south to north. Highlights include Stormy Sea (squid, mangosteen, chili) inspired by the chef’s fishing trips in the South; Gai Krajan (chicken, chili, cashew), which recalls a dish he had while traveling through Kaeng Krachan National Park; and Isaan Market, a mushroom bite that focuses solely on seasonal mushrooms found in the mountainous regions of the Northeast.
Dessert includes Suan Maprow (coconut, guava and honey) followed by a selection of petit fours named Black, White, and Gold.
